CRISPY FRIED TOFU

THIS IS THE EASIEST WAY TO MAKE CRISPY RESTAURANT STYLE FRIED TOFU AT HOME.

Purchase the Extra Firm Tofu, drain on a towel for about 15 minutes.
Start some veggie oil cooking in a pan. I like to use Sunflower oil in a cast iron pan.

Test your oil with a splash of water off your fingers to make sure its hot.

Season your Tofu with salt, pepper and a little garlic powder.

Place half the tofu in the oil and cook, stirring with a metal spatula until it is crispy and golden brown.
Continue adding all your tofu as you take out the ones that are done and place them on a paper towel to drain.

ADD TO YOUR FAVORITE STIR FRY, PASTA, OR JUST EAT PLAIN.

ZUCCHINI BISCUITS

Zucchini Biscuits or Zucchini pie whatever you want to call it. It's Good!!


4 cups shredded zucchini
1 cup shredded Cheddar cheese
3/4 cup Parmesan cheese
1 3/4 cup Bisquick or baking mix
4 beaten eggs
1 tsp salt
1 tsp oregano
1/2 cup veggie oil
1/2 chopped onion
2 chopped garlic cloves




Mix everything together, spread into a greased 9x13 baking dish. Bake at 400 for 25-35 min.

MY FAVORITE SPINACH DIP



Thaw 1 box of frozen spinach. Squeeze all the water out and place in a bowl.
Chop 3 scallions (green onions)
Chop 1 can of sliced water chest nuts
1 pkg Knorr dry vegetable soup packet.
1 cup sour cream
1 cup mayonnaise


Mix everything in bowl and serve with bread, pita or crackers.

SUMMER SQUASH CASSEROLE

Chop 6-8 yellow summer squash into small dice sizes. 
Chop 1/2 white onion into small dice sizes.
Place in a cooking pot and cover with water.




Bring to a boil and simmer until squash is tender.
MY DAD PLANTED THE BUMPY CROOKED NECK SQUASH AND I PLANTED THE SMOOTH STRAIGHT NECK.
Drain water off.


Add 1 cup shredded Cheddar cheese or 
Velveeta cheese.
Add 1 sleeve of crushed Ritz or round crackers.
Add salt and pepper and your good to go. So Good!!

BERRY BARS

1 1/2 Cup flour
1 Cup brown sugar
1 1/2 Cup rolled oats
1 tsp baking powder
1 tsp sea salt
mix dry ingredients in a bowl. 
Add 
2 softened sticks (1 cup) butter
cut in butter into dry ingredients until it forms a moist
crumble mixture.


In a greased baking dish 8x8 pour in 1/2 of the crumble mixture and press down.


Then add 3/4 jar of your favorite jam. I have made this with strawberry, cherry and recently seedless blackberry jam. Spread a thin layer of jam on the crust.


NOT TOO SWEET BUT JUST RIGHT FOR A SNACK OR EVEN BREAKFAST
Then add the other half of the crumble mixture and gently press on the jam.


bake at 350* for about 40 min. or until just getting golden brown. Cool before cutting and serving.

ROASTED ARMADILLO POTATOES

Slice potatoes 3/4 the way through. Not all the way. 
Place on a baking sheet. Drizzle olive oil over them and sprinkle with sea salt. Bake at 410* for approx. 40 minutes.
Remove from oven and melt butter over them. 
YOU CAN SEE I DID THIS WITH ONE SWEET POTATO. EVERYONE WANTED THAT ONE.
Serve with sour cream or as some would do......ketchup.

ZUCCHINI HASH BROWN CASSEROLE

tTonight's dinner has to be made with zucchini. It's that time of year. 

2 thinly sliced zucchini
3 green onions or 1/4 round onion chopped
1 large bag frozen hash browns (you can shred your own potatoes too)
1/2 container of veggie dip or sour cream is okay too with some freshly chopped herbs (basil, parsley)
2 eggs
1/2 cup milk (I use plain soy milk)
salt and pepper
1/2 cup shredded cheese (your choice, I used Muenster)
half sleeve crushed crackers or crushed potato chips
( I used crushed sour cream and onion chips)

First I sliced two zucchini really thin. Chopped three green onions. 
In a greased casserole dish place one layer of zucchini. Add half of a large bag of hash browns and the diced onions.

Then mix two eggs with the half container of veggie dip and salt & pepper. 
Whisk together. Pour half of the mixture over potatoes.



Put another layer of zucchini and the rest of the hash browns in the dish. Then pour the remaining egg/dip mixture over the potatoes. Continue to use up the rest of the zucchini on top. Put your cheese on top and place on a baking sheet in case it spills over. You wouldn't want your oven to get messy.


Bake at 375 for an hour. Covered. Then remove the cover and add the crushed cracker/chips to top and bake for another 10 minutes. It should be crispy and golden brown. Serve with a side salad.
