THE EASIEST SANDWICH SPREAD

This sandwich spread is so easy and great for when you are picnicking, traveling or need a quick idea. It is so variable that you will not get tired of it. We don't!

1 large can garbanzo (chick peas) drained and rinsed
1/2 small onion
1/2 cup pickles (dill or sweet)


Now you can add celery, carrot, peppers, black or green olives...any kind of veggies.
Put all ingredients into a food processor ( I have one of those Ninjas) grind until chopped fine but not too much. You are not making humus.


Place the ground chick peas with veggies in a bowl



Add...


1/2 cup mayonnaise or soy mayo
1 tsp Dijon mustard (or any kind)
s & p to taste


Spread on toast, bread, crackers, buns, inside pita ...what ever you would like. So much better than those vegetarian processed meats for sandwiches.
This spread is also good hot, spread on pita, top with cheese and warm in a toaster oven or broiler for a couple of minutes.
I have also chopped Romain lettuce and mixed into the spread too.  This reminds me of Tuna salad.
