2 cups sugar
4 TBSP Carob or Cocoa powder
1 stick butter
1/2 cup soy milk
Turn down heat to simmer and add....
1/2 cup peanut butter
1/4 chopped nuts (any kind)
1 TBSP Vanilla
4 1/2 cups oatmeal (not quick oats)
Now I like to add some optional ingredients
1/4 cup shredded coconut
1/4 cup chopped dates
1/4 cup raisins (the more the merrier)
Let the mixture sit and cool for a few minutes. Scoop tsp size balls onto wax paper and as they cool completely they will set up. Keep refrigerated.
These cookies make 65 and will go up in smoke!!
