VEGAN POTATO SALAD

I am not vegan but sometimes I need to make vegan food for others. It's the dressing on it that makes it vegan.
Start by peeling 4-6 potatoes (if they are red-skinned or new potatoes, there is no need to peel them. The skins are Delicious!!
Dice the potatoes (not too small)
Cover with cold water and boil until tender. Drain in a colander and set aside to cool.
Then begin dicing the veggies.
2 diced carrots
4 diced celery stalks ( i use the leaves and all)
1/2 diced onion
1/2 diced fennel bulb and some tops too (optional)
4 sliced radishes (optional)
Lets get together?
(feel free to use any raw veggies that you have)

Dressing


1 box silken tofu
3/4 cup soy milk
3/4 cup EVOO
1/2 tsp garlic powder
1/2 tsp sea salt
1/2 tsp cracked pepper
1 TBSP Lemon juice
1 tsp dill


Blend in your food processor or blender. Chill


After the potatoes have cooled completely, mix the potatoes and chopped veggies together.
Add the dressing one-half at a time. Season with salt and pepper to taste, Garnish with paprika. Yummy!!
